Walking Taco Bake

Walking Taco Casserole is a fun and delicious twist on traditional tacos, featuring a baked dish of ground beef, cheese, and seasonings served on a bed of corn chips with toppings like lettuce, tomatoes, green onions, and sour cream.

Ingredients

Taco Seasoning Mix:

  • 1 tbsp chili powder
  • 1 1/2 tsp ground cumin
  • 1 tsp fine sea salt
  • 1 tsp ground black pepper
  • 1/2 tsp paprika
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp crushed red pepper flakes
  • 1/4 tsp dried oregano

Taco Casserole:

  • 1 lb lean ground beef
  • 1 medium yellow onion diced
  • 1 can of RO-TEL original undrained
  • 1/4 cup water
  • 2 cups freshly grated sharp cheddar cheese
  • 3 cups corn chips

Toppings:

  • 1 jalapeno optional – sliced and diced to taste
  • 1 cup shredded lettuce
  • 8 cherry tomatoes halved
  • 2 green onions sliced
  • 2 tbsp diced cilantro
  • 1/4 cup sour cream
  • 1/4 cup salsa
